The Wally’s Hut Shiraz Winemaking:
The Wally’s Hut Shiraz is part of the export range of wines from Nugan Estate. There are many environmental factors that allow the winemaking team to produce this beautiful wine by hand. An incredibly mild summer with above average rainfall is largely responsible for prolonging the harvest. This factor alone allows the slow even ripening of the fruit. The winemaking team, under the guidance of Chief Winemaker, Daren Owers, harvest the Shiraz fruit at optimum ripeness. This all takes place in the cool of the night to preserve delicate fruit flavours.
As soon as the team finish picking the fruit, it is then crushed and fermented in static tanks with automatic irrigators. Thereafter, the wine will then go through cool fermentation. This technique will maintain a fruit driven style, where some components receive French oak in fermentation. This will also add complexity and structure to the wine.
The Wally’s Hut Shiraz Winemaker’s Comments:
This wine is deep purple in appearance with youthful crimson hues. It also has lifted ripe berry fruit aromas, with hints of earth, pepper and dark chocolate. Additionally, sweet red berry fruit flavours are also present, with spice and a silky tannin finish.
