The Uprising Cabernet Sauvignon Winemaking:
The Nugan Estate winemaking team, under the guidance of Chief Winemaker Daren Owers, work hard to source the best grapes across Australia. The grapes for the Uprising Cabernet Sauvignon are from the Nugan family’s premium vineyards in Australia. The team will harvest the fruit for the Cabernet Sauvignon in small batches at optimum ripeness. They will do this in the cool of the night to preserve the premium fruit flavours.
Afterwards, the winemaking team will crush, yeast and gently pumped over the fruit. We do this to avoid the extraction of bitter tannins. They will then transfer the wine to French Oak barrels. The wine will remain in the barrels for 9 months, allowing it time time to mature, prior to final blending and bottling.
The Uprising Cabernet Sauvignon Winemaker’s Comments
This wine is deep crimson in appearance with purple hues. It has enticing plum and cassis aromas, with hints of dark chocolate. This wine has an intense and complex palate of blackcurrant and vibrant cassis. It also has smooth velvety tannins, which are beautifully layered with subtle French oak.
