Third Generation Cabernet Sauvignon Winemaking:
To achieve optimum ripeness for the Third Generation Cabernet Sauvignon, the winemaking team will harvest in the cool of the night. Chief Winemaker, Daren Owers, insists on this in order to preserve the delicate fruit flavours. After we pick the grapes, the team will then crush and ferment the fruit. This will all take place in static tanks with automatic irrigators. Select parcels of the fruit will receive American oak treatment during fermentation. This is done in order to add complexity and structure to the wine.
Third Generation Cabernet Sauvignon Winemaker's Comments
This wine is dense red in appearance with a youthful crimson hue. It also has sweet aromas of berry fruits entwined with milk chocolate and delicate allspice nuances. Additionally, this wine will feature sweet flavours of blackcurrant and plum with overtones of earth and spice tantalise the palate.
