Cookoothama Cabernet Merlot
The Cabernet Sauvignon and Merlot grapes for this wine are sourced from premium vineyards in the Riverina located in regional New South Wales.
The fruit was harvested in the cool of the night and delivered in small batches to the winery. The grapes were destemmed, chilled and cold macerated for 48 hours ahead of yeasting and pumped over in traditional style. The wine was then transferred to a combination of new, one and two year old French and American Oak for further maturation prior to final blending and bottling.
Winemakers Comments
This wine is deep crimson in appearance with a youthful purple hue. It maintains aromas of ripe berry fruits and allspice, which we infuse with herbs and dark chocolate. This wine has a very rich and concentrated palate of blackcurrant and plum, with smooth silky tannins and well integrated oak.

This is a great food wine that is versatile enough to compliment a broad range of red meat dishes such as lamb, curries and full flavoured casseroles.

Cookoothama, “cook-a-tharma” is the Aboriginal word meaning ‘fertile land’. The hands on the label pay tribute to the pioneers who have lived and cultivated the land spread out along the banks of the Murrumbidgee River transforming it into the prosperous, fertile land it is today.
