Talinga Park Cabernet Merlot
Deep crimson with youthful purple hues. A medium bodied wine that showcases the youthful aromas of ripe red berry fruits, and rich aromas of plum entwined with spicy flavours and hints of herbs and dark chocolate. On the palate, concentrated blackcurrant and plum, layered with spice, complex silky tannins and subtle well-integrated oak to finish.
The Talinga Park Cabernet Merlot Winemaking
The 2017 Talinga Park Cabernet Merlot was a fantastic fintage. We were lucky enough to produce the 2017 vintage with wines that were in balance, but they also have excellent colour and fruit concentration. This wine contains both Cabernet Sauvignon grapes as well as Merlot grapes. The winemaking team harvest the Cabernet Sauvignon and Merlot fruit at optimum ripeness. As with most of our wines, this happens in the cool of the night to preserve delicate fruit flavours. After picking, we then crush, yeast and pump over the grapes. We do this in the traditional style to avoid the extraction of bitter tannins. We then allow the wine to ferment and mature with some American and French oak treatment.

We layer these flavours with spice, complex silky tannins and subtle well-integrated oak to finish.
WINE & FOOD MATCH
This wine is the perfect partner to barbequed lamb backstrap with Moroccan spices and cous cous. It will also go well with a selection of farmhouse cheeses. This wine, as with the majority of the wines from Nugan Estate, is vegan friendly. This wine is 14.5 percent alcohol and we suggest you serve this wine at 18 degrees Celsius for the maximum enjoyment.
