Drover’s Hut Chardonnay
The Drover's Hut Chardonnay Winemaking:
For the Drover's Hut Chardonnay we select only the finest grapes. We pick the fruit in the cool of the night to preserve the crisp and bright aromatics and flavours. These characters are present when the fruit is cooler. Once we make this selection, we then crush, destem and bag press the fruit. It will then go through slow, cool fermentation. The fermentation process takes place in our stainless steel tanks. After fermentation, we leave the wine to mature in French oak barrels for a further 12 months. We leave the yeast in contact with the juice for 6-8 weeks. We stir the tanks everyday to build the middle palate texture of the wine. Our winemaking team do this to add complexity and enhance the fruit and oak integration, prior to final blending and bottling.
This wine is named after the hut which is on the edge of our Chardonnay vineyard. This hut sits on the banks of the Murrumbidgee River in Griffith, rural New South Wales. We keep fishing tackle and a pile of good booze out there, for the staff who want to fish from the river.
This wine is pale straw in appearance, with lively aromas of peach and nectarine with a touch of oak in the background. Followed by a bright fruit driven palate of stone fruit, citrus and lightly toasted oak. We regard this wine for its balance, while it maintains a crisp acidity on the finish.

This wine is fantastic with a variety of seafood dishes. Nugan Estate's Chief Winemaker enjoys this wine when paired with marinated baby octopus or pan-fried scallops with artichoke hearts, tossed with wild rocket.
