This Chardonnay is sourced from our Cookoothama Vineyard on the banks of the Murrumbidgee River at Darlington Point in the Riverina. The fruit was harvested in the cool of night and delivered in small batches. To preserve the delicate natural aromas and flavours, the fruit was gently crushed, chilled and pressed immediately. The free run juice then underwent slow, cool fermentation to preserve the delicate fruit flavours. Initial fermentation was in stainless steel tanks, after which the wine was transferred to new and seasoned French & American oak for 18 months to complete fermentation. Once dry, the wine remained on yeast lees for further oak maturation undergoing fortnightly batonage to increase complexity and mouth feel prior to final blending and bottling.
