The Cookoothama Chardonnay from Nugan Estate Winemaking
We source the grapes for the Cookoothama Chardonnay from the Cookoothama Vineyard. This vineyard sits on the banks of the Murrumbidgee River, in Darlington Point, New South Wales. As with most of our wines, we harvest the fruit in the cool of night. We then transport these fruit in small batches to the winery, which is not too far from the vineyard. To preserve the delicate natural aromas and flavours, we crush, chill and press the fruit immediately.
The fruit for this wine is then put through a slow, cool fermentation process. The winemaking team, under the guidance of Chief Winemaker, Daren Owers, do this to preserve the delicate fruit flavours. The initial fermentation process occers in stainless steel tanks. Once this step is complete, we transfer the wine to new and seasoned French and American oak for 18 months to complete fermentation. Once these are dry, the wine will remain on yeast lees for further oak maturation undergoing fortnightly batonage. We do this to increase the complexity and mouth feel of the wine prior to final blending and bottling.
