The Cookoothama Botrytis Semillon

The hands on the label of the Cookoothama Botrytis Semillon are a nod to the Aboriginal pioneers of the Riverina. They developed this rugged countryside into the beautiful vineyards we have here now. This region in the Riverina is famous for its Botrytis. Because of our warm climate the botrytis is naturally occurring and makes a fantastic Botrytis Semillon.

This wine has won two of the best Botrytis Semillon wines, sauterne style wines by decanter magazine in the UK. Along with many other medals and trophies, this wine is a serious contender.

After harvest we press the grapes straight off the skins before fermentation. Fermentation takes quite a lengthy time because the juice is so thick.

As a result, this wine is absolutely fantastic. I suggest you pair it with blue vein cheese, warm foie gras, also with rich desserts like sticky date pudding. You can also smell that characteristic of caramel and dried fruits on the nose. On the palate you find dried apricots, orange peel and just beautiful spice. This wine is definitely a crowd pleaser at the end of the night.

 

The Cookoothama Botrytis Semillon Winemaking

We Carefully monitor the botrytis infection to ensure the “super-ripe” is in ideal condition. We then crush, chill and press the fruit immediately. Afterwards, the juice settles for 24 hours prior to racking and fermentation. The initial fermentation takes place in stainless steel tanks. After this, we transfer the wine to French oak for 8 months maturation prior to final blending and bottling.
