Bossy Boots Sauvignon Blanc Winemaking
This Bossy Boots Sauvignon Blanc is sourced from Victoria’s cool climate region of King Valley. After picking, the grapes were gently pressed and underwent slow, cool fermentation to preserve the delicate fruit flavours famous from this cool climate region. Initial fermentation was in stainless steel tanks. Once dry, we allow the wine to mature prior to final blending and bottling.
The personality range, like all ranges in Nugan Estate wines, is a range about the people and all things on our vineyards. They are all true stories and they bring character to the wine. Because wine is all about character and characters.
The parcels for the Bossy Boots Sauvignon Blanc are specially grown parcels of wine grapes and it is all about quality. So again, we harvest this particular wine in the cool of night to preserve the quality. We then destem and crush the grapes and bag press to preserve this fruit at its optimum.
Afterwards, we age this wine for 12 months on leaves in French oak barrels. And we leave it on leaves to give it a bit more character, a bit more nuttiness, it also develops the body. It has got a fantastic nose, it is very rich, a nice viscosity across the palate. And it has flavors of peach, nectarine and cashew nut. Fantastic again with poultry, fish, rocks with fish and even with oysters, you know it has got that beautiful clean acidity and it could work well with those as well. I hope you enjoy this, it’s one of my favourites.
