Street Talk Sauvignon Blanc Winemaking:
We source the grapes for the Street Talk Sauvignon Blanc from two locations. The first location is a vineyard in Victoria’s cool climate King Valley. The second location, where we source the Semillon grapes from, is a vineyard in Darlington Point, in regional New South Wales. Once the winemaking team harvest the grapes, they will then destem and chill the parcels to 5 degrees Celsius. They will leave the fruit on the skins to allow it to receive 24 hour skin contact.
The Winemaking team, under the guidance of Chief Winemaker, Daren Owers, will then press the membranes. They will then clarify and inoculate the selective yeast cultures. This is done to promote the wonderful aromatics and mouthfeel, which can be found in this wine. The fermentation for the Sauvignon Blanc occurs in temperature control vats. The parcels will remain on gross yeast less for a further 4 months before racking and blending.
Street Talk Sauvignon Blanc Winemaker’s Comments
This wine is pale straw in appearance, with a youthful green hue. It has vibrant aromas of lemongrass and lime over a fresh and lively, tropical fruit salad. This wine also has an intense and zesty palate of lemon/lime, passionfruit, kiwifruit leading to a succulent, crisp finish.
