The La Brutta Cabernet Sauvignon Sangiovese from Nugan Estate

The winemaking team at Nugan Estate harvest the parcels for the La Brutta Cabernet Sauvignon Sangiovese from two different locations. Firstly, we harvest the Cabernet Sauvignon from Wrattonbully, on the Limestone Coast South Australia. Secondly from the King Valley, North East Victoria, and these parcels remain separate.

The winemaking team, under the guidance of Chief Winemaker, Daren Owers, will crush and de-stem the fruit. They will then chill and gently macerate it under an inert gas blanket for 48 hours. After the fruit has been left to cool, they will then drain a portion of the juice. Afterwards they will then warm the juice and inoculate it with pure yeast culture. This is all done prior to primary fermentation. The winemaking team will then plunge and pump over the juice for a total of 10 days. The winemaking team do this in order to have a wine that is intense in concentration and depth. The wine requires 24 months to mature in seasoned French and American oak barrels before final blending.
